The knives in the Damastahl series are fully forged from Japanese VG-10 steel. As many as 33 layers of steel with a high carbon content are forged together into one knife blade that has a very long durability, extremely high strength and an excellent ability to maintain sharpness.
The black handles of the Damastahl knives are molded around the steel of the blade, and polished so that bacteria and dirt cannot collect in cracks and joints. The handle is also designed so that it is ergonomically correct and, together with the blade, gives the knife the perfect balance that makes it both safe and comfortable to work with.
The knife blade is sharpened to 18° and has a Rockwell hardness of 61, which means that the steel is extremely hard and thus you can get an extremely sharp egg and keep the sharpness longer than most would expect.
